‘The Cuisine of the Irevan Khanate’ is the product of many years of research, focusing on a topic considered very relevant and important today, both from a historicalethnographic and national-spiritual perspective. This is the comprehensive study of the ancient culinary culture of the Irevan Azerbaijanis and, in general, those Azerbaijanis who were once residents in the territory of the state now called ‘Armenia’. The book comprises numerous historicalethnographic facts that relate to Irevan cuisine and that of Western Azerbaijan in general, thereby demonstrating the antiquity and richness of the material culture created by the indigenous population of that region and their continued provenance over the territory. The book presents information about the daily life, livelihood and food culture of Azerbaijanis, who are the original residents of the Irevan region, together with examples of material culture, including a survey of agricultural tools, kitchen utensils, and the names of hundreds of unique dishes and drinks, together with 413 recipes. Based on historical sources and ethnographic surveys, this monograph, which provides irrefutable evidence of the baselessness of Armenian claims, is a valuable encyclopedic source on the material and spiritual culture of this ancient region of Azerbaijan.
